Ed Hick's Whiskey Elderflower

The Elderflower cordial in this cocktail came from Bray Head in co. Wicklow and it was picked by Ed Hick. That warrants the naming of a cocktail in our book! Kir Lethale - Champagne Cocktail

For our second episode, we show you how to take some delicious tropical fruit from Asia and use them for a champagne cocktail we like to call the Kir Léthale. This would be a perfect drink to serve for New Year's Eve or any other occasion that merits some style and bubbly!

Long Island Iced Tea

The perfect party drink! If you want to kick off a good auld session or kickstart a dying one, lash out the Long Islands! The key is in the fresh sweet n' sour. Make enough for a dozen or drinks by mixing 6 tablespoons of sugar syrup with a pint of water and the juice of 4 limes and 2 lemons. A splash of coke at the very end will give each one the look and slight taste of tea.

The Wild Irish Daiquiri

Throughout the later summer months in Ireland, wild Irish blueberries called "frockens" can be found all over the country. We've been picking loads of them recently in Wicklow and doing what every self respecting cocktail lover should do, sticking them into Daiquiris! By using Orchard Apple Syrup from Kilkenny to sweeten it we keep it really local.
